Ingredients — 2 servings

10 oz sirloin steak, cut into bite-size pieces

10 oz baby potatoes, quartered

2 medium carrots, chopped

2 cups broccoli florets

1 tbsp olive oil, divided

1 tbsp butter

2 garlic cloves, minced

½ tsp garlic powder

½ tsp Italian seasoning

½ tsp paprika

Salt and black pepper, to taste

Fresh parsley, chopped

Directions

1. Preheat oven to 425°F (220°C).

2. Toss potatoes and carrots with half the olive oil, garlic powder, Italian seasoning, salt, and pepper. Roast for about 20 minutes.

3. Add broccoli, toss lightly, and roast another 10–12 minutes until everything is tender.

4. Season the steak with paprika, salt, and black pepper.
