A New York classic with a surprisingly salty history!

Long before Syracuse became known for its salt potatoes, Central New York was an important center of salt production. In the 1800s, salt-industry workers began cooking small potatoes in salty brine, creating a dish that would become a regional favorite.

The recipe is wonderfully simple: small potatoes, heavily salted water, and melted butter. The result? Tender potatoes with a distinctive salty crust and a rich, buttery finish.

Today, Syracuse salt potatoes remain a beloved part of Central New York food culture, especially at summer cookouts, barbecues, and family gatherings.
